Japanese Butter Roll (Crescent Roll) バターロールのレシピ

If you are looking for a soft, fluffy yet slightly chewy perfect white bread recipe. This post is for you.

You may spread some butter and jam on these Japanese Butter Rolls, make it into sandwiches or just eat it plain. It’s a basic bread dough that you should master it. Once mastered, you could experiment and make different variations.

Sure you say this looks like Crescent Roll, but I beg to differ. (Well, maybe you could say it’s my version of Crescent Roll)

Recipes of Crescent Roll often result in a more dense and compact bread. Which, I think it’s not look appealing. Basically, not a good bread dough.

I am dying to try to make my own croissants, but the weather in Singapore is killing me. I doubt the butter is going to fold in probably. (oh well, I think I’m still going to try it out…)

Just use it to dip curry gravy, make it into croutons or bake some bread pudding.  But I doubt it will last that long. My family loved it so much that they will take one whenever they pass by the basket. It’s just this good!

Japanese Butter Roll (Crescent Roll)

Ingredients
  1. 300 grams of bread flour
  2. 100 grams of plain flour
  3. ½ tsp. of salt
  4. 2 ½ tsp. of instant yeast
  5. 4 tbsp. of fine white sugar
  6. 250 ml of warm milk
  7. 70 grams of melted unsalted butter
  8. 1 egg
Egg wash
  1. 1 egg and 1 tbsp. of milk
Instructions
  1. In a large mixing bowl, first add in warm milk, yeast, sugar, melted butter, and egg. Followed by dry ingredients, bread flour, plain flour, and salt.
  2. Using the dough attachment of your mixer, mix everything together until it forms into dough.
  3. Then turn your mixer to speed 4 and knead for about 10 minutes. Be sure to let your mixer rest in between to avoid overheating.
  4. Once your dough has become smooth and elastic, stop kneading and let it proof in a large greased bowl for an hour.
  5. After an hour, knock out all the air and transfer the dough onto a floured surface. Roll the dough to about 20 inch round shape.
  6. Use a pizza roller and cut out 16 triangles.
  7. Roll each of them up to form the pretty rolled shape. Pinch the end to make sure it is secured.
  8. Transfer them into greased pans.
  9. Let it proof for the second time for one and the half hour.
  10. Preheat oven to 180C or 160C fan-forced, gently brush them with egg wash and bake it in the oven for 10 to 15 minutes.
  11. Let it cool and serve. You may spread some jam or butter, make it into a sandwich or even eat it plain.

Baked Donuts – 3 ways – Just like fried!

IMG_9545_editedNobody will believe you that these are not fried donuts. But, they are not! They are my baked donuts. Cut off the extra fats, not goodness.

I don’t really like the idea of having to fry these a few at one time. Not only it is tedious, but also horrible! I often get those oil splattering on my arm and I can tell you it’s not a funny situation. Why fry when you can bake it all at one goal?
My aim is to always do things the fuss-free, calm, and easy way.

This recipe is very versatile and you can make many different donuts of your choice. In this recipe I have demonstrated mainly 3 different types of donut you can make. Warm Cinnamon Sugar Donut Holes, Jelly Donuts, and the Classic Sugar-glazed Donuts.

Yum Yum Yum! I have even made some Fudgy Dark Chocolate Donuts using my Chocolate Fudge Sauce! I will show you guys how to make that soon so stay tuned!

Better than fried, Baked Donuts
Make around 12 donuts and some donut holes

Donut base
  1. 2 ¼ tsp. of instant yeast
  2. (2 tbsp.) 30 ml of warm water
  3. (3/4 cup) 130ml of warm milk
  4. 3 tbsp. of white sugar
  5. (3 tbsp.) 45 ml of melted unsalted butter + plus extra for coating
  6. 1 egg
  7. 1 teaspoon of vanilla extract
  8. (2 ½ cup) 310 grams of plain flour
  9. ¼ teaspoons salt
Cinnamon Sugar Donut Holes
  1. (½ cup) 125 grams of white sugar
  2. 1 tsp. of grounded cinnamon
  3. Melted butter
Sugar glazed Donuts
  1. (1 ½ cups) 190 grams of icing sugar
  2. 1 tsp. of vanilla extract
  3. Water
Jelly Donuts
  1. Choice of jam or jelly
  2. Icing sugar
Instructions
  1. In a mixing bowl, stir in warm water, milk, melted butter, vanilla extract, sugar, yeast and egg together.
  2. Then, throw in plain flour and salt. Mix on medium speed until combined. Once combined, continue kneading on medium speed for 5 minutes until smooth. Stop the mixer in between to prevent overheating.
  3. Let it proof for an hour.
  4. Transfer into a floured surface and use a rolling pin, roll until about ½ inch (1 cm) thickness.
  5. Cut out donut circles using a 3 inches (7.5 cm) round cookie cutter.
  6. Use a small round cookie cutter to cut the center to make donut holes.
  7. Reroll and repeat until finished. To make jelly donuts, just use the 3 inches round cookie cutter will do.
  8. Transfer it into well-greased baking pans, making sure to leave at least 2 inches apart.
  9. Let it proof for the 2nd time for 30 minutes.
  10. Preheat oven to 180 or 160C fan-forced.
  11. Gently brush some melted butter onto all of the donuts and bake it in the oven for 10 to 15 minutes.
  12. Immediately after baking, coat donut holes with melted butter and dust them with cinnamon sugar.
  13. To make jelly donuts, use a satay stick and poke through so that you can pipe in the filling later.
  14. Use a piping bag and fill the donuts through the holes . You can fill both sides to have more fillings.
  15. Dust them with icing sugar to give that rustic look.
  16. To make sugar glazed donuts, mix icing sugar and some water slowly until reaches a desired consistency. Be sure not to mix in too much water from the start otherwise it will be too runny.
  17. Mix in some vanilla extract for flavoring.
  18. Dip each donut into the bowl of glaze and use a fork to drip off the excess.
  19. Let it set. Double dip them again to make it extra special.
Notes
  1. Microwave it the next day so that it can be soft and fresh again!

Invisalign – Teeth Straightening Part 2

If you guys have been following me, you will know that I blogged about my teeth straightening journey part 1 last December 2014. I had to do an operation before I start my Invisalign treatment. Of course, not everyone needs to do an operation for this treatment! Mine was extra-extra special, go read about my previous post if you want to know why. Nevertheless, yes! I am going to have a perfect teeth!

I am so upset as people often criticize me that I have a really ugly and crooked teeth. In some angle, I manage to make them look perfect like I have straight teeth. But I am not going to have a perfect straight teeth unless I do something about it. It looks really ugly if you look it from the side!

You can really it see from this angle. Really ugly! Front teeth out curved back it into the centre sort of like a butterfly. Yucks. Taken at Alaska, 2013.

I think perfect straight teeth is the one of the most important thing that everyone must have. I mean if you have near-to perfect teeth maybe you can shove off the idea. Like a friend of mine, her’s was almost too perfect. I’m so jealous! But not everybody have near-to or perfectly straighten teeth! So I am sure that it is in most of our to-do list. Not only you get to straighten your teeth, you also can correct your bite. Which I’m sure most people would have this issue.

 I wanted to do braces to straighten my teeth. But like I said in my previous post, I really hate that ugly metal wire. I am not going to wear that for 2 whole years! 

 Therefore, I have to say that I’m going ‘INVISIBLE’! Not that I’m really going to become invisible, but my aligners are. No disgusting colored metal wires! All thanks to, Invisalign.

 

Yes, Invisalign. The clear alternative to braces. It’s clear, almost invisible, comfortable and easy to maintain clean.

There are many advantages when compared to traditional braces. Here are just some highlights. 

Not only that, I often heard from my friends who wore braces that they had irritations from their thick metal wire which cause their lips to sore. Sounds bad! Personally for me, I don’t really feel any irritations from wearing Invisalign aligners. Although, I feel a little tight as if my teeth were about to chip off when I change to a new set of aligners. But, the feeling will go away after 2 to 3 days. However, I’m sure most people who wear braces will also face the same pain as me every month after their dental visit to tighten it. Because honestly, if your aligners/wires were to be too loose, I doubt it will help to push your teeth.

This is how I look when I put my aligners on. Not that obvious, right? 
As you can see, there were some bumps and those are called attachments. They are glued to my teeth and will help to push my teeth more effectively. No worries because they know how to remove it after you finish your treatment.  And not everyone gets attachments, so you may not even have those white bumps like me!

At first, I don’t really like the face that I have these ugly bumps on my teeth. I felt that it will look ugly and everyone will be judging. But I have gotten used of it and nobody really notice it. Nobody cares. LOL

It is important to use the chewies (that green rubber to bite on it) every time when I change my aligners because it will make sure to fit it in and move my teeth gently. To be honest, I rarely use those. I only use it the first time I every time change my aligners. But oh well, just make sure the aligners fit! Ms. Jessebelle has been nagging me about not using the chewies as often as she would like me to. Oops, I guess I will try to use it more often.

Low-Fat Almond Muffins

IMG_9270Edited I really like this muffin recipe because not only it is so simple, it is also light and refreshing. These muffins have a subtly nutty sweet flavor due to the combination of almonds and apple together.

I have used my homemade applesauce for this recipe.

Low-fat Almond Muffins
makes 10 to 11 muffins

Ingredients
  1. (125 grams) ½ cup of unsweetened applesauce
  2. 4 eggs
  3. (125 grams) ½ cup of white sugar
  4. (90 grams) 3/4 cup of plain flour
  5. (90 grams) 3/4 cup of ground almonds
  6. 1/8 tsp. of salt
  7. ¼ tsp. of baking powder
  8. ½ tsp. of vanilla extract
  9. ½ tsp. of almond extract
  10. Sliced Almonds
Instructions
  1. Preheat oven to 180 or 160C fan-forced.
  2. In a large bowl, whisk in eggs, applesauce, vanilla and almond extract together. Give it a good whisk for a minute until eggs are slightly frothy.
  3. Stir in sugar, ground almonds, baking powder and salt until well combined.
  4. Lastly, fold in plain flour. Transfer into muffin pan lined with paper liners.
  5. Scatter over some sliced almonds
  6. Bake it in the oven for about 25 minutes.
Notes
  1. Use ground almonds instead of plain flour for gluten-free muffins

SG50 Merlion Cake

This year is a very special year for all Singaporeans. We are celebrating Singapore’s 50th birthday.

A city that’s called my home. I would like to share this recipe and why I created it.

 I have used a Red Velvet Cake based in contrast with the White Vanilla Buttercream to represent Singapore’s flag. So when you cut the cake, you will cake that red and white interior!

What’s every Singaporean’s favorite all time biscuits? Gem Biscuits! They are small and cute. When I was young, I loved it so much that I eat it almost everyday. I like to eat the sugary icing first, then the plain old biscuits. Which, I’m sure people living in this little red dot do that. Yum, that’s nostalgic.

Handmade Merlion and SG50 Logo Chocolates. This is a very unique way of using chocolate and I think we did beautifully. When we talk about creating a national cake like this, Merlion is ought to be there no questions asked. Merlion is our national icon and people will instantly recognize that it’s Singapore! I once said it in chinese, “一个很特别可是不真实的动物”. (A very special but unreal animal)

 Beautiful, nostalgic, and so Singapore! Looks like a lion garden city full of lovely citizens

SG50 Merlion Cake

Cake
  1. 1 box of Betty Crocker Red Velvet Cake or double recipe of my egg-free Red Velvet Cupcakes.
Vanilla Buttercream
  1. 100 grams of unsalted butter, softened
  2. 100 grams of shortening
  3. 240 grams of icing sugar, sifted
  4. 1 tsp. of vanilla extract
Chocolate Art
  1. 100 grams of white chocolate with red food coloring, melted
  2. 100 grams of white chocolate, melted
  3. Lollipop sticks
Decorations
  1. 300 grams of Gem Biscuits
To make the cake
  1. Preheat oven to 180C or 160C fan-forced.
  2. I am using Betty Crocker Red Velvet Cake box today. Following the instruction, mix in eggs, water and oil.
  3. Transfer into two greased 8-inch round cake pan lined with parchment paper.
  4. Bake it in the oven for 30 to 35 minutes.
  5. Let it cool while you make your Chocolate Art.
To make your Chocolate Art
  1. Mix 100 grams of melted white chocolate with red food coloring until reaches your desired shade.
  2. Transfer it into a piping bag.
  3. Draw an outer frame for your Merlion and make sure your inverted pictures are under a parchment paper and secure them using scotch tape.
  4. Start by tracing the outline of the Merlion. Use a toothpick to remove any flaws and even it out.
  5. Let it set in the freezer for 5 minutes.
  6. Then flood the inside surface of the Merlion. Use a toothpick to spread.
  7. At the same time, trace SG50 words using melted white chocolate.
  8. Let it set in the freezer for 10 minutes before continuing.
  9. To reinforce together, cover the Merlion with a layer of melted white chocolate using a spoon to spread, making sure not to pass the outer frame.
  10. Next, cover SG50 logo with red. Put a lollipop stick and cover it more with chocolate.
  11. Let it set in the freezer while you make your cream.
To make your cream
  1. Beat soften butter, shortening, vanilla extract and icing sugar on low speed until combined. Then, beat on medium high speed for a minute until light and fluffy.
  2. Before you frost the cake, trim the top of both cakes to make flat surfaces.
  3. Frost the cake. We will only be covering with one layer of cream which is the crumb coat as we will cover it will Chocolate Art and Gem Biscuits.
  4. Let it set in the fridge for 30 minutes.
To assemble
  1. Carefully remove Chocolate Art using a metal spatula. Then, place it on top of the cake. Gently press it down to stick with the cream.
  2. Next, cover the rest of the cake with Gem biscuits. Finally, stick the SG50 logo on it.

Homemade Unsweetened Applesauce

Back to basics, today’s recipe will be some delicious homemade applesauce!

IMG_9242_editedServe it with a main dish, use it in baking or even just eat it as a plain dessert. There are so many ways to eat applesauce. IMG_9245_edited

Some like with cinnamon, some like with extra sugar or honey. For me, I prefer to eat it just as it is.

I will also be using this recipe for my upcoming Fat-free Almond Muffins. So stay tuned!

Homemade Unsweetened Applesauce
Makes 1 1/4 cups of applesauce

Ingredients
  1. 2 apples, peeled cored and chopped
  2. (250ml) 1 cup of water
Instructions
  1. Bring it to a boil and let it simmer for 10 minutes with the lid covered.
  2. Puree it in a food processor or blender.
Notes
  1. You may add some cinnamon or sugar if you like.

Chinese Steamed Egg (蒸水蛋)

This simple yet silky dish is commonly eaten throughout most chinese households with rice.

Yet, not all households can make this smooth and creamy silky savory custard.

What’s my secret?

IMG_9173_editedSoy milk, unsweetened. Why? I don’t know, my Aunt told me this and I do as I told. No questions asked.

The result is important! Not only it is smooth and creamy, soy milk also adds richness to the flavor. It’s like heavy cream in western dishes!

Chinese Steamed Egg (蒸水蛋)
Serves 8
Make one 8-inch round custard

Ingredients
  1. 7 eggs
  2. (1 cup) 250 ml of vegetable stock
  3. (1 1/2 cup) 375 ml of unsweetened soy milk
  4. 1 tsp. of light soy sauce
  5. ½ tsp. of sesame oil
  6. Chives and sliced large chili to garnish
Instructions
  1. Preheat steamer while you make your custard
  2. Whisk in all the ingredients into a large measuring jar.
  3. Transfer the egg mixture into an 8 inch round pan through a sieve.
  4. Steam it for about 20 minutes until firm to touch.
  5. You may garnish with some chives and sliced large chili. Serve this delicious savory custard with rice.
