Jelly Cake (Agar Agar Cake)

I loved jelly with fruits in it, I also loved buttery cake. One day I told myself, “Hey, why not combine it together?”. I’m glad that I thought of it! It turn out to be so delicious, so yummy! It is refreshing when you consume it cool. You guys definitely have to try this, is just so fast and easy!

I used agar agar powder which is extracted from seaweed. It contain lots fibre, so it’s really healthy! Don’t forget that strawberries are high in antioxidant!

As I stated above, agar agar is made from seaweed, which is great for vegans and vegetarians.  I’m sure lots of Asian prefer agar agar to collagen.

Ingredients for fruit layer
  1. 200 ml of water
  2. 1 tsp of agar agar powder
  3. 2 tbsp of white sugar (30 grams)
  4. 10 strawberries
  5. 2 sliced of canned peaches
  6. Or any fruit of your choice
Ingredients for 2nd layer
  1. 500 ml of water
  2. 2stp of agar agar powder
  3. 4 to 5 tbsp of white sugar
Ingredients for 3rd layer
  1. 200 ml of water
  2. 1 tsp of agar agar powder
  3. 2 tbsp of white sugar
  4. 1 tsp of strawberry flavor
  5. A few drop of red food coloring. (depending on how red you want)
Fruit layer
  1. Cut away the top part of a strawberry, slide into halves.
  2. Slide peaches.
  3. Arranged the fruits in an 18cm (7.1-inch) round cake pan, set aside.
  4. In a pot, add in water, agar agar powder and white sugar on medium-high heat.
  5. Bring it to a boil, stir occasionally. Let it simmer for about 30 seconds, making sure that all the powder and sugar has been dissolved.
  6. Pour it into the pan, freeze it for about 10 minutes.
2nd layer
  1. While your jelly/agar agar in setting make your 2nd layer.
  2. Cut butter cake into cubes.
  3. In a pot, add in water, agar agar powder and white sugar on medium-high heat.
  4. Bring it to a boil, stir occasionally. Let it simmer for about 30 seconds, making sure that all the powder and sugar has been dissolved.
  5. Take out your set jelly/agar agar in the freezer, use a fork to scratch surface of the set jelly/agar agar before pouring in another layer of jelly/agar-agar. This will ensure it would not fall out.
  6. Pour your liquid jelly/agar-agar in to the pan, add in your butter cake.
  7. Freeze it for about 15 mintues.
3rd layer
  1. While your jelly/agar agar in setting make your 3rd layer.
  2. In a pot, add in water, agar agar powder, white sugar, strawberry flavor and red food coloring on medium-high heat.
  3. Bring it to a boil, stir occasionally. Let it simmer for about 30 seconds, making sure that all the powder and sugar has been dissolved.
  4. Take out your set jelly/agar agar in the freezer, use a fork to scratch surface of the set jelly/agar agar before pouring in another layer of jelly/agar-agar. This will ensure it would not fall out.
  5. Pour your liquid jelly/agar-agar in to the pan, chill it well in the fridge. (NOT FREEZE!)
Notes
  1. Jelly/agar-agar will set in room temperature, so make sure to stir every few minute if you are waiting for the jelly/agar-agar in the pan to set. Why do I freeze? It is to let the jelly set faster.
