Home-made Mint Chocolate Chip Ice Cream, this rich creamy ice cream, with overflowing of chocolate rice, so mint, so chocolaty. With no artificial coloring in it, I use vegetable spinach as a natural coloring, this way not only we have the green, also the benefits of the vegetable. Make this ice cream and share it with your friends and family, they will not believe how good it is.

Ingredients
  1. 5 Egg Yolks
  2. 2 cups of Whole Milk
  3. 1 cup of Heavy Cream
  4. ¾ cup of Granulated Sugar
  5. 1 tsp of Peppermint Extract
  6. 90 grams of spinach (leaf part ONLY)
  7. 1/2 cup to 1 cup of Chocolate Rice
Instructions
  1. In a large bowl, Whisk together the eggs and sugar until it turns pale in color. (Takes about 5 minutes)
  2. In a saucepan, add the milk and cream and bring just under boil. ( You will see bubbles at the sides)
  3. Turn off the heat and add a cup of hot mixture into the eggs and sugar whisk a few time. Stir the egg and sugar mixture continuously.
  4. Pour the milk and egg mixture back into the saucepan and cook for another 10 minutes or until it thickens on low heat. Stir continuously.
  5. Shut off the heat and immediately transfer into a large bowl. (Not to leave in the saucepan as it will continue to cook and curd the eggs.)
  6. In a blender, add in all the spinach and ¼ cup of ice cream mixture and puree them. Add in the rest of the ice cream mixture and puree them. Add in Peppermint Extract.
  7. Strain the mixture through a strainer, cover with plastic wrap that is actually touching the mixture, refrigerate for a minimum of 6 hours.
  8. Make sure to put your ice cream machine insert in the freezer overnight.
  9. Once it's cold, turn the ice cream machine on and add in your cold ice cream mixture according to manufacturer's instructions, usually takes about 22 - 40 minutes. (Mine takes about 30 minutes)
  10. Once your ice cream has been thick and creamy (mine takes about 25 minutes), add
  11. in the Chocolate Rice little by little and continue to let it stir in the machine for another 5 - 10 minutes. Freeze it in an air tight container overnight.
Notes
  1. I prefer 1/2 cup of chocolate rice.
