Bolu Kukus Kueh Pandan (Steamed Pandan Sponge Cake)
180 grams 3 eggs
stalks of pandan leaves
of pandan extract
Preheat your Tefal Brilliance Steam Oven to 100C, steam function, making sure that the water tank is full.
Blend chopped pandan leaves and milk in a blender.
Strain out 30ml of pandan milk.
In a mixer bowl, whip eggs and sugar on high speed using an electric mixer for 10 minutes until ribbon stage.
Sift in cake flour and give it a quick whisk.
Then, drizzle in pandan milk, vanilla extract and vegetable oil while the mixer is running.
Transfer into an ungreased 6 inch non-removable round cake pan bottom lined with parchment paper. Drop the pan or use a skewer to raise the air bubbles out
Cover the pan entirely with cling film wrap and use a rubber band to secure it, making sure that it is tight.
Transfer into the preheated steamer oven and steam for about 45 minutes.
Invert the cake immediately to cool down.
Function used: Steam, 40 minutes @ 100C
