Bolu Kukus Kueh Pandan (Steamed Pandan Sponge Cake)


  • 180 grams 3 eggs
  • 75 g sugar
  • 30 ml vegetable oil
  • 45 ml milk
  • 80 g cake flour
  • 3 stalks of pandan leaves
  • 1/4 tsp of pandan extract


  • Preheat your Tefal Brilliance Steam Oven to 100C, steam function, making sure that the water tank is full.
  • Blend chopped pandan leaves and milk in a blender.
  • Strain out 30ml of pandan milk.
  • In a mixer bowl, whip eggs and sugar on high speed using an electric mixer for 10 minutes until ribbon stage.
  • Sift in cake flour and give it a quick whisk.
  • Then, drizzle in pandan milk, vanilla extract and vegetable oil while the mixer is running.
  • Transfer into an ungreased 6 inch non-removable round cake pan bottom lined with parchment paper. Drop the pan or use a skewer to raise the air bubbles out
  • Cover the pan entirely with cling film wrap and use a rubber band to secure it, making sure that it is tight.
  • Transfer into the preheated steamer oven and steam for about 45 minutes.
  • Invert the cake immediately to cool down.


Function used: Steam, 40 minutes @ 100C
