I like to enjoy my sugar-free brownies by heating them up and serving it with a large scoop of ice cream. The texture of the brownie is dense and chocolatey, it can be stored in the fridge for up to a week without a problem. However, you may want to consume it warm or in room temperature as it will harden once it’s chilled.

What is Gavia? 

Gavia is made up of the finest blend of Stevia plant extract and Erythritol. Gavia is all-natural, zero calorie, zero glycemic index sweetener that tastes and feels like sugar. Mother Nature sweetness from Stevia.

Sugar-free Brownie with Gavia Natural Sweetener
Serves 12
Write a review
  1. 200 grams salted butter
  2. 120 grams sugar-free dark chocolate
  3. 150 grams Gavia Natural Sweetener
  4. 3 eggs
  5. 1/2 cup of plain flour
  6. ¼ cup. of dutch process cocoa powder
  7. 1 tsp of vanilla extract
  8. 1 tbsp of molasses
  9. Sliced toasted almonds
  1. Preheat oven to 180C
  2. Melt butter and chocolate in a microwave.
  3. Transfer into a mixing bowl and whisk in Gavia Natural Sweetener.
  4. Stir in molasses and vanilla extract.
  5. Add in eggs, one at a time.
  6. Lastly, fold in plain flour and cocoa powder.
  7. Once everything is well combined, divide the batter evenly into a greased 12-square brownie pan.
  8. Sprinkle some sliced toasted almonds.
  9. Bake in the oven for about 20 to 25 minutes.
  10. Let it cool for an hour before removing it from the pan.
  1. You may use 12 muffin pan if you don't have 12-square brownie pan.

First Gavia Booth @ SUTD 2016

It was my first Gavia booth. Nevertheless, everything went well. I’m happy that the response turned out well and everything was sold out at the end of the event.

Lemon Blueberry Muffins, Banana Chocolate Muffins, and Orange Cranberry Almond Muffins. These are some of my favorite sugar-free recipes. A lovely lady bought a Lemon Blueberry Muffins to try and instantly love it! She ordered 40 muffins in one goal. 

To receive such support from people like her, I really appreciate it. 

Apple Cakes

I’m really happy that I could finally use some of my cake stands.

Honestly, it was hard work, I didn’t expect working to be so hard at all. During that period, I actually did not get to sleep well at all. Other than juggling my usual errands, I had to pick up extra ingredients for the booth, transport stuff, mass baking, prepare packagings, and cleaning up here and there.

I had to end my end around 3 AM and get up at 6 AM to prepare to get ready to the event venue.  The event started at 8 AM and all the way till 6 PM. Which I have to pack and clean up afterward. There will be always be walking by asking for more information etc, I recalled that I did not get have my lunch all the way until 4 PM. I got home around 8 PM, showered and rest. Then get ready for the following day till 3 AM again. 

Luckily, it was only a 2-day event. Yet, I am happy that I participated because more people can know about Gavia and I can gain experience from it. Not only that, I met many new friends!

Homemade Unsweetened Applesauce


Back to basics, today’s recipe will be some delicious homemade applesauce!

Some like with cinnamon, some like with extra sugar or honey. For me, I prefer to eat it just as it is.

I will also be using this recipe for my upcoming Fat-free Almond Muffins. So stay tuned!

Homemade Unsweetened Applesauce
Makes 1 1/4 cups of applesauce

  1. 2 apples, peeled cored and chopped
  2. (250ml) 1 cup of water
  1. Bring it to a boil and let it simmer for 10 minutes with the lid covered.
  2. Puree it in a food processor or blender.
  1. You may add some cinnamon or sugar if you like.

Sugar-free Banana Bread – Stevia

Hello guys! Today, I will show you guys my Sugar-free Banana Bread! 


I will be using grounded dried Stevia leaves instead of sugar. This is why it is a sugar-free cake! (Not to mention that this is also a wholemeal (whole wheat) cake too!)


Stevia is a natural herb that is really sweet if you have never heard of it before. It has no effect on our blood sugar level which means it is diabetes-friendly and it also has no (zero) calories

Since Stevia have been found in South America, it has been used by the Guaraní people for more than 1500 years! Not only that, Japanese have also used this herb for decades as a sweetener.


I have been experimenting to make a cake that is sugar-free, yet all naturally sweeten. I have used Stevia for this recipe in the form of grounded dried Stevia leaves. This way, you know that you are getting what you want, as natural as possible, less processed.

Of course, though Stevia is sweet, the sweetness is slightly different than refined white sugar. It may have bitter after taste if used excessively. And the sweetness of the leaves will last longer than sugar. 


For a cup of white sugar, you could replace it with 2 tablespoon of grounded dried Stevia leaves. It goes great in your smoothies, coffee, and tea. However when used in baking, you will need to tweak a little bit as it is not a bulking ingredient like sugar. You could possibly add some extra bulking ingredients like, pureed fruits, unsweetened applesauce, or beaten egg whites. So if you are going to use Stevia for baking, experiment it until you get your desired texture. 

You could possibly create your own Stevia-sugar blend by combining them if you just wanting to consume less sugar. Your baked goods will more likely to remain unchanged.

However, do note that grounded dried Stevia leaves does not dissolve as it is just, grounded dried leaves. They don’t brown at all unlike sugar, and will turn your cake green.


Sugar-Free Banana Bread
One loaf cake (7.9" x 4.3")

  1. 100 grams of unsalted butter
  2. 1 1/2 tbsp of grounded dried stevia leaves (or 190 grams of white sugar)
  3. 3 eggs, separated
  4. 1/2 tsp. of vinegar
  5. 1 tbsp. of vanilla extract
  6. 1/2 tsp. of banana extract
  7. 360 grams of banana, mashed
  8. 100 grams of wholemeal/wholewheat flour
  9. 140 grams of cake flour
  10. 1/4 tsp. of salt
  11. 1 1/4 tsp. of baking powder
  1. Preheat oven to 180C or 160C fan-forced.
  2. Line parchment paper.
  3. In a bowl, whisk together wholemeal, cake flour, and baking powder. Set aside.
  4. Mash bananas.
  5. In a mixing bowl, beat egg whites and vinegar until stiff peaks.
  6. In another mixing bowl, cream together unsalted butter and stevia until light and creamy. Drizzle in egg yolks, vanilla extract and banana extract, continue beating until well combined.
  7. Stir in dry ingredients and mashed bananas into the mixture. Make sure that you do not overmix.
  8. Gently fold in egg whites a half at a time until evenly mixed.
  9. Transfer it into a loaf pan that has been greased and lined with parchment paper. Drop the pan to raise large air bubbles.
  10. Bake it in the oven for about 45 to 50 minutes.
  11. Let it cool in the pan for about 15 minutes and transfer on to the wire rack to further cooling.
  12. Serve.
  1. - If don't have cake flour, replace it with plain flour
  2. - Banana extract is optional
  3. - Use 190 grams of white sugar if don't have stevia
