This recipe is a little unconventional. I separated egg yolk and egg white and whisked the egg white with sugar until stiff peaks. This actually helps the pancakes to be light and fluffy.Pancakes

Picture perfect. I actually like to go with a slab of Butter,  drizzle of Maple Syrup, some Berries and a dollop of Greek Yogurt. But, in this case, I did not use any Greek Yogurt for photoshoot wise.

Perfect Fluffy Pancakes

Ingredients
  1. 2 large eggs, separated
  2. 2 tbsp. vegetable oil
  3. 250 ml buttermilk
  4. 1 tsp vanilla extract
  5. 200 grams of plain flour
  6. 30 grams of cornstarch
  7. 1 tablespoon baking powder
  8. ½ tsp of baking soda
  9. 2 teaspoons white sugar or Gavia Natural Sweetener
Instructions
  1. In a large bowl, whisk in egg yolks, vanilla extract, vegetable oil, and buttermilk until well combined.
  2. Sift in plain flour, corn starch, baking powder and baking soda.
  3. In another clean bowl, whisk egg whites and sugar using a mixer on high speed until stiff peaks.
  4. Slowly fold in your egg white meringue into your batter until combined.
  5. Preheat your non-stick frying pan on medium-low heat. Grease it with a thin layer of oil.
  6. Once heated through, drop about ½ measuring cup worth of pancake batter into the pan.
  7. Cover with a lid and let it cook for about 2 minutes. Flip and cook for another 2 minutes.
  8. Transfer onto serving plate and repeat until batter is used up.
Notes
  1. Freeze it in ziplock bag and reheat in the microwave/toaster for your next breakfast.

Cheese Tarts – SG Food Trends 2016

Now, you could get these Cheese Tarts almost anywhere in Singapore. Most bakeries have adopted their take on these tarts.

Feeling fancy to make some at home? Try my Cheese Tarts recipe! It is actually very simple. These Cheese Tarts are to die for! And they tasted best when it’s warm, so make sure to reheat it in a toaster oven before you serve!

Ingredients
  1. one crust recipe from Fruit Tart
  2. 185g cream cheese
  3. 185 grams of yogurt
  4. 40 grams salted butter
  5. 185ml fresh milk
  6. 45g caster sugar
  7. 4 tsp corn starch, depending on consistency desired
  8. 1 egg
  9. 1/2 tsp vanilla extract
  10. 1 egg yolk + milk mixture for brushing on top of custard
Instructions
  1. In a double boiler, melt together cream cheese, milk, yogurt, vanilla extract, sugar, and butter until combined. (In this case I am using my own Natural Sweetener Gavia, which is made from stevia)
  2. Crack in an egg and stir in cornstarch. Whisk continuously until the mixture starts to thicken.
  3. Remove from the double boiler and strain the cheese mixture through a sift.
  4. Cover the cheese mixture with a cling firm touching.
  5. Let it cool while you make your crust.
  6. Using my fruit tart recipe, mold the dough into 24 mini tartlets.
  7. Prick the bottom of the crust with a fork.
  8. Bake it in a preheated oven at 180C for 8 to 10 minutes.
  9. Once baked, let it cool and increase oven temperature to 230C.
  10. Pipe out the filling using a piping bag.
  11. Brush the cheese tartlets with egg wash
  12. Transfer back to the preheated oven and let it roast for about 5 to 8 minutes.
  13. Let it cool and serve warm.
  14. Cheese tart taste best when it is warm. Simply reheat it in a toaster for 5 minutes.

  1. Make 24 mini tarts or 12 standard size tarts.

Salted Egg Yolk Cookies – Chinese New Year

Who could ever image that we could use salted egg yolks and make into cookies?

This unique taste has been very popular in Singapore. And I can’t believe that we have created so many different type of dishes and desserts.

For this year Chinese New Year, these cookies have been popping all over the net. I guess one of the reason why it is so hype this 2016 compared to previous year is because there’s the recent crazed about Salted Egg Yolk Croissant that surfaced near our country, JB.

 Butter crumbly cookie with lovely depth of salted egg yolk flavor.

Anyway, If you love this pungent flavor, be sure to give it a goal! Salted Egg Yolk Cookies infused with Curry Leaves herb. I had used one of my mum’s old cookie mold, but you also could roll out to around 7mm thickness and cut using a cookie cutter. It works too!

Salted Egg Yolk Cookies
About 35 cookies depending on the type of cookie cutter/mold.

Ingredients
  1. 100 grams of salted butter, softened
  2. 40 grams of icing sugar
  3. 45 grams of salted egg yolk powder (or 4 salted egg yolk, steam for 5 minutes and mashed into bits)
  4. 10 grams of milk powder
  5. 60 grams of plain flour
  6. 70 grams of cornstarch
  7. 20 curry leaves, minced
Egg wash
  1. 1 Egg yolk with a tbsp of water.
Instructions
  1. Preheat oven to 170C or 150C fan-forced.
  2. Cream softened butter and icing sugar until light and fluffy.
  3. Mix in salted egg yolk powder or mashed salted egg yolks.
  4. Combine milk powder.
  5. Add in minced curry leaves.
  6. Fold or knead in plain flour and cornstarch until just combined.
  7. Press into dusted cookie mold or roll out until 7 mm thickness and cut with cookie cutter.
  8. Egg wash the surface.
  9. Bake it in the oven for 10 to 15 minutes.

I used a wooden square mold for this recipe. If you don’t have, you could make it round by shaping it into a log or make it squarish with your hands. Do whatever you like, you can even roll out and use a cookie cutter!

Ingredients
  1. 150 grams of salted butter, softened
  2. 100 grams of icing sugar
  3. 1 egg yolk
  4. 1 tbsp. of pandan paste
  5. 125 grams of cornstarch
  6. 125 grams of plain flour
Instructions
  1. In your mixing bowl, cream butter and icing sugar until light and fluffy.
  2. Drizzle in egg yolk and pandan paste.
  3. Then sift in cornstarch and plain flour.
  4. Mix until just combined.
  5. Transfer into a wooden square mold with plastic wrap.
  6. Freeze it for an hour.
  7. Slice 5mm thickness and bake it in a preheated oven 170C for 15 minutes.

Honey Cornflakes

Ingredients
  1. (3 cups) 90 grams of plain cornflakes
  2. (6 tbsp.) 90 grams of honey
  3. (6 tbsp.) 90 grams of salted butter
Extra
  1. Dried cranberries
  2. Chocolate chips
  3. Chopped nuts
Instructions
  1. Preheat oven to 150C/130C fan-forced.
  2. Melt honey and salted butter on low until bubbling in a sauce pan.
  3. Throw in cornflakes and mix well.
  4. Transfer into mini cupcake pans with liners.
  5. Bake it in the oven for 5 to 7 minutes.
Notes
  1. Add extra toppings for some variations.

Melt in the mouth Butter Cookies (Jenny Bakery’s Copycat)

Everyone nowadays are so crazy about Jenny Bakery’s Cookies from Hong Kong! Because, it is so good!

Last month, my brother went to Hong Kong for a business trip and heard about the Jenny Butter Cookies crazed.  Immediately, he went to queue for a good hour to get us some.

It was just so buttery delicious that I had to recreate it! Looking at the ingredients stated from Jenny’s cookie tin, and with the help of the internet I manage to create the perfect melt in your mouth butter cookie.

Please ensure that you are using high quality butter. In Singapore, salted Golden Churn butter in a canned is considered the finest of all.

You will sure to love this recipe! The recipe makes around 15 cookies, so be sure to double or even triple so that everyone will get a fair share.

Butter Cookies (Jenny Bakery's Copycat)

Ingredients
  1. (5 oz.) 150 grams of salted butter, softened
  2. (1/4 cup) 30 grams of icing sugar
  3. (3/4 cup) 95 grams of plain flour
  4. (8 tbsp.) 75 grams of corn starch
Instructions
  1. Preheat oven to 150C or 130C fan-forced.
  2. Cream softened salted butter and icing sugar until light and fluffy.
  3. Stir in plain flour and cornstarch.
  4. Transfer into piping bag with a star tip. Pipe evenly onto a baking tray lined with parchment paper.
  5. Bake it in the oven for 25 to 30 minutes.

Impressive and so delicious. The flavor mocha has been popularized among our local bakeries. You can find all kinds of mocha desserts everyone. Range from breads (eg. Roti Papa) to cakes with cream.

Not a cake decorator? Nevermind, this swiss log (or log cake…) will be covered with lots of chopped peanuts and chocolate chips. All your flaws can now be covered. Hahaha

Mocha Swiss Roll (Yule Log Cake)

Cake
  1. 4 eggs, separated
  2. ½ tsp of vinegar
  3. 5 tbsp. of white sugar
  4. ¼ tsp. of salt
  5. 1 tsp. of vanilla extract
  6. 1 tsp. of coffee emulsion
  7. 4 tbsp. of cocoa powder, plus extra for dusting
  8. 60 grams of cake flour
  9. 3 tbsp. of vegetable oil
  10. 3 tbsp. of milk
  11. 1/4 cup of freshly-brewed coffee
  12. Syrup
  13. 2 tsp. of sugar and 4 tbsp. of warm water, mix well
Mocha Cream
  1. (500ml) 2 cups of whipping cream
  2. 3 tbsp. of white sugar
  3. 3 tbsp. of coffee emulsion
Sprinkles
  1. Chocolate chips
  2. Chopped peanuts
Instructions
  1. Preheat oven to 200C/ 180C fan-forced
  2. Whisk egg yolks, 1 tbsp. of sugar, and salt until combined.
  3. Add in coffee emulsion and vanilla extract
  4. Drizzle in milk, oil and freshly brewed coffee.
  5. Sift in cocoa powder and cake flour. Stir until well mixed.
  6. Set aside while you whip your egg whites.
  7. In a clean bowl, whisk egg whites and vinegar on high speed until frothy.
  8. Then gradually add in the rest of the sugar and continue whisking on high speed until stiff peak.
  9. Fold in egg white batter into egg yolk mixture a third at a time until well combined.
  10. Transfer into a baking tray lined with parchment paper. Bake it in the oven for 10 minutes. (384 x 260 x 16mm)
  11. Once out of the oven, immediately cover with another parchment paper and let it cool completely.
  12. Brush some syrup onto the sponge cake
  13. Whip chilled whipping cream and sugar until soft peaks. Drizzle in coffee emulsion and whip until stiff peaks.
  14. Transfer half of the coffee cream onto the sponge cake.
  15. Carefully roll into a log.
  16. Frost the cake with the rest of the cream.
  17. Sprinkle some chocolate chips and chopped peanuts.
  18. You may also pipe out some cream and dust icing sugar for some decorations

  1. (Notes: You may use 1 tsp. of instant coffee and hot water instead of freshly brewed coffee)

This is a very impressive cake, yet making Mille Crepe Cake is actually very simple.

Look at those lovely layers! Layered with cream, it is very creamy and refreshing when you bite onto it. You don’t need an oven to make this, great for people who wants to bake but don’t have one.

I had it when my sister got me some of these when she was in town. It was a bombed so I decided to recreate it. It is something special so I decided to put it as one of my Christmas Recipes for 2015.

Do get good quality Matcha powder! Obviously, don’t get it from RedMan/PhoonHuat. Theirs was really bad.

Matcha Mille Crepe Cake

  1. 3 eggs
  2. (45ml) 3 tbsp. of vegetable oil
  3. (750ml) 3 cups of milk
  4. ¼ tsp. of salt
  5. 1 tsp. of vanilla extract
  6. (250 grams) 2 cups of plain flour
  7. 2 tbsp. of matcha powder
  8. (75 grams) 6 tbsp. of white sugar
Matcha Cream
  1. (690ml) 2 ¾ cups of whipping cream
  2. (165 grams) ½ cup + 2 tbsp. of white sugar
  3. 2 ½ tbsp. of matcha powder
  4. Matcha powder and icing sugar to dust
To make the crepe
  1. Blend all the ingredients together until smooth.
  2. Let it rest in the fridge for 30 minutes.
  3. Preheat a nonstick frying pan with a light coating of oil on medium low heat.
  4. Add in about 1/3 of a measuring cup worth of batter and swirl the pan.
  5. Once the batter is dry and the edges starts to brown, flip the crepe immediately.
  6. Let it cook for another 10 to 15 seconds and transfer into a platter to cool. Repeat until finished.
  7. You will have around 16 to 20 pieces.
  8. Let it cool completely.
  9. Once cooled, use a smaller plate as a guide and cut off excess crepes so that it will look neater later.
  10. Whip chilled whipping cream, sugar, and sifted matcha powder until stiff peaks.
  11. Transfer into a chilled bowl so that your cream can remain cold while you layer them together.
  12. To assemble them, spread a good amount of cream evenly. Cover with another crepe on top. Repeat until you finished layering.
  13. Carefully let it chill in the fridge for at least 3 hours.
  14. Dust with some matcha powder. (Since it’s Christmas, I will also dust some icing sugar as snow)
  15. Cut and serve.

Peppermint White Chocolate Brownie (Giveaway with MiniJon)

Dense fudgy brownie with peppermint-flavored white chocolate and candy. This is so good. Honestly, I had three of these! Yup, I don’t lie.

Super super easy to make. For the brownie is all-in-one bowl method, where you just dump everything together and mix. Once baked, spread some melted white chocolate flavored with peppermint extract and sprinkle some crushed candy. The rest is history.

Peppermint White Chocolate Brownie

  1. (1/4 cup) 65 grams of unsalted butter, melted
  2. (½ cup) 125 grams of fat-free Set yogurt (or Greek yogurt)
  3. (1 cup) 250 grams of light brown sugar
  4. 2 eggs
  5. (1/2 cup) 60 grams of plain flour
  6. (1/2 cup) 60 grams of unsweetened cocoa powder
  7. 1 teaspoon vanilla extract
  8. 1/8 tsp. of salt
Topping
  1. 150 grams of melted white chocolate
  2. ¼ tsp. peppermint extract
  3. Crushed peppermint candy
Instructions
  1. Preheat oven to 170 C or 150C fan-forced.
  2. Mix in all the ingredients together.
  3. Transfer into 7-inch square pan lined with parchment paper.
  4. Bake it in the oven for 25 to 30 minutes.
  5. Let it cool completely.
  6. Mix melted white chocolate and peppermint extract together.
  7. Spread white chocolate evenly onto the brownie.
  8. Sprinkle crushed peppermint candy. Cut and serve. You may serve it chilled.
