It’s weekday evening, you want something quick and simple. Nothing too fancy, but not too shabby. Whether it’s just for just you and your partner, or you have asked a friend or two who stays nearby to come by after work for chitchat session, this baked rice recipe will sure be ready in under 30 minutes.

The key ingredient to this recipe is actually the curry paste. Not only it has species in it, but it also contains garlic and onion, allowing you to skip the process of chopping those up. Any brand of the curry paste is fine, go with what you prefer and adjust the flavour accordingly to your spicy level. For me, I enjoy making it from scratch. What I usually do is to blitz up some curry powder along with curry leaves, dried chilis, garlic, onion, ginger, cinnamon powder, salt, pepper, soy sauce and a drizzle of vegetable oil to emulsify everything into a smooth paste and stick it into the fridge. It’s super convenient when your curry cravings kick in or when you have an unexpected guest to impress.

For versatility, I used one of my Tefal Ingenio pans for this recipe. From stir-frying to baking to serving, I have only used one pan, saving me some time and effort when cleaning up later on. That’s the great thing about Tefal Ingenio, it can be used on the hob, in the oven, as a serving plate for a dish and even store leftover food into the fridge.

Each Ingenio set comes with a removable handle which is used across all the pans. And since there is no handle sticking out when you are not using, you could store the pans away easily by stacking it up and tucking it away in a corner of your cabinet.

I finished it off with an egg in the centre of the baked rice. It’s a simple way to bring the dish up a notch.

Ingredients

  • 2 cups of cooked rice
  • 75 grams of carrots chopped
  • 65 grams of long bean chopped
  • 1 large chili deseeded and thinly sliced
  • 1 25 grams tau pok, thinly sliced
  • 30 grams of curry paste
  • 50 ml of coconut milk
  • 30 ml of water
  • 150 grams of pizza topping cheese
  • Salt and mushroom powder seasoning
  • Sprinkle of curry leaves

Instructions

  • Preheat your oven’s boiler to 200C.
  • In a non-stick frying pan, heat up some vegetable oil on medium low heat and add in the curry paste. Stir fry for a minute until the spice is fragrant and aromatic.
  • Next, stir in some vegetables, chopped carrots, large chili, and long beans. Cook for a few minutes until the vegetable is evenly coated with the paste.
  • If you want, you could add in your favourite ingredients, like chicken, tofu, peas and seafoods.
  • Scatter in some thinly sliced tau pok and give it a quick stir before adding your cooked rice.
  • Season it with some salt and mushroom powder seasoning.
  • Once you are done, drizzle in coconut milk and water. The fragrant of the coconut milk will instantly hit you and it smells so good!
  • Stir-fry for a few more minutes until the rice soaks up the liquid. Crack in an egg in the middle and sprinkle pizza topping cheese over the pan.
  • Transfer the pan to the oven and detach the handle. Bake it until the cheese is evenly melted and golden brown.
  • Remove the pan from the oven by attaching the handle back to the pan and serve immediately.
  • Sprinkle some chopped curry leaves when you serve.

Without further ado, here are my top 3 recommendations from Terminal M.

Thanks to Cafe Papa, enjoy the classic Dosirak (S$10.90) which includes a generous portion of well marinated and tender chicken or beef pieces, a beautiful sunny-side-up and crunchy fragrant seaweed laying on a bed of warm rice. The perfect and wholesome meal in a box. Be sure to shake the box before digging into it.

Each pouch of goodness possesses iconic flavour profile of Singaporeans. A wonderful dish for tourists to explore our local flavour.

I like my rice to be ‘wet’, so the next time I order it, I’ll request for some extra gravy to go along with.

Their big breakfast consists of bacon, sausage, eggs, fresh tomato and herbs, mushrooms fricassee, brioche toast, and roasted potatoes. I love their roasted potatoes, even though it is so simple, it is so comforting. What a feast!

They also tried to recreate traditional taste with a modern twist with this Nonya Crepe. This dish reminds me of Nonya Kueh Dadar. Combining familiar taste like pandan and coconut cream with vanilla gelato, it is a good start. Yet, I’m not a big fan of the texture. Nevertheless, I am not a big fan of the traditional Nonya Kueh Dadar anyway.

Another worthy item to mention is their Granola. Delicious maple-sweetened Greek yogurt with crispy hearty oats, nuts, and a generous amount of fruit toppings, it is light and refreshing.

Located at Cavan Road, the.twenty.cavan is a new restaurant & bar that features Asian Fusion dishes that are certainly special and unique. The interior is based on a rustic theme and you will certainly feel like a hipster when dining in there. Yet, you will still get that exquisite feel.

Though the restaurant focuses on serving a wide variety of beers and wines, I wasn’t feeling good so I opted for their non-alcoholic drinks instead. Spicy Mango was recommended by one of their bartenders and I certainly pleased with that. Served with fresh mint leaves and mangoes, it was very refreshing and revitalizing. However, the mango cubes will a little on the tart side. Still, it wasn’t a problem with me as I enjoyed it.

We started it off with some appetizers. The Garden Green Salad consist of pan-fried prawns, cashew nuts, fresh berries and green chili dressing. I was definitely amazed by the unusual taste it gave me when I had my first bite.  I like the fact that they paired the hearty leaves with dragonfruit and goji berries as they marry well together.

You get a choice of three starters or four at a selected price. The platter I had have four different appetizers, Mushroom Skewers which comprises peppercorn-flavoured Portobello and Shiitake mushrooms, Deep-fried Soft Shell Crab with curry chicken floss and Quad Seafood which comprises a top shell, scallop, prawn, baby octopus tossed with mint hot bean sauce served with jellyfish.

Deep-fried Soft Shell Crab with curry chicken floss was one of my favorites among it. Though it may sound very freakish it was actually really good!

As I mentioned above just now that they feature Asian Fusion items, my first main course was Red Rice Braised Pork Ribs. If you know the Hakka chicken dish made with red glutinous rice wine lees, this is Chef Andrew’s pork ribs version. To be honest, I’m never a big fan of pork ribs and this taste more like the western version of char siew to me.

I’m a big lover of the Hakka chicken dish and char siew rice itself, but the Red Rice Braised Pork Ribs is just weird for me. That being said, I feel that there is some other mains worth coming for!

Good classic Roasted Chicken with black rice. You can’t find black rice in many places so I’m really surprised and contented that they chose that as the staple for this dish. Also commonly known as the Emperor’s Rice, it is extremely high in antioxidants, vitamins and very nutrition! Sure it’s going to be a hearty meal.

Chicken Galangal Rice Bowl is another very hearty main that serves with lots of assorted greens and black rice. This rice bowl was one of my favorite, simple clean eating, yet still so good!

Thick brioche with bacon, pork bratwurst, sauteed button mushrooms and scrambled eggs. The eggs were well made, it’s still gooey and soft. Overall, a very typical big breakfast.

I really liked their version of Fish and Chips as they have used Tilapia fish. The best part was that they had left the skin on, making it more flavorful. Their fish batter isn’t the same as the typical fish and chips batter, I’m not sure what type of flour and ingredients they have used for their fish batter but it was quite good and well-seasoned!

Pumpkin Yam Puree with Coconut Cream. This is a traditional dessert with a modern twist of the Teochew Orh Nee. It actually has aloe vera and pandan juice mixed into the pumpkin and yam puree to make it more special. Orh Nee lovers should definitely give it a try!

I always like to have a refreshing dessert to clean my palate after a delightful feast. Paired with pureed mixed berries, the pudding was lightful tart! It almost felt like I was having some really good creamy yogurt! This Lemon Pudding with Mixed Berries is the way to go.

To sum up, I think they really put in the effort to make something special and extraordinary. If you are around the area, why not pop by to check this place out? They have a great rustic ambiance that will make you feel like you are in a cozy back alley.

To end the meal, I got to try out their new dessert, Tangy Lemon Tart. It was a so good because the tart has a balance of tartness and sweetness. I have personally tried many and this was one of the best! The crust was also very buttery, it is something I would come back again for!
